So what I got from them is that the original group never released an official definition.
Now I'm starting to think that it was the first fan-made nightcore uploaders (Maikel, etc.) who set the definition for nightcore, based on quotes from the Nightcore group websites.
Still kinda confused here. Could you guys help clarify this?

I don't think there is a set definition of nightcore.
The original nightcore group started out mixing techno/dance music, and they mentioned this in their websites. These quotes served as "guidelines" for people to make fan-made nightcore, and the very first nightcore uploaders made their music making sure to follow these "guidelines". And so, nightcore was generally accepted as a form of mixing techno/dance music.
People say that nightcoring other genres is disrespectful because techno/dance music is part of these "guidelines." Nightcoring any other genre means that you are not following the "guidelines." As implied in the original Nightcore group websites, the intention of nightcore is to "mix techno/dance music into faster and more happier sounds for your listening pleasure." As stated in an interview, the group "wanted the whole trance/dance vibe."
Sped up pop, rap, etc doesn't really fit into that intention. When you speed it up, it still isn't techno/dance.
When people nightcore non-techno song after non-techno song, the intention of nightcore as mixing techno/dance music into happier sounds fades away, and the result is one giant mess of a meme similar to Alvin and the Chipmunks.
